The reason kosher is a chef favorite and awesome for seasoning meat (along with other dishes) is its larger, coarser grain size. These bigger, more textured grains make it easier to pinch and toss on food (its fun...try it some time!) But koshers more robust grain size also means it can be more challenging to chew. So we always recommend that you chew your kosher with a dash of caution.
